Besotted with northern Spain and its world-leading vermouth culture, French ex-pat and wine guy Clement Cantenys is the palate behind ‘Manuel’. Based in San Sebastián, Clément works with the team at Distilerías Acha (the oldest distillery in the Basque Country) where the base spirit is crafted using a Cognac still from 1831. Together, Clément and the experts at Acha, create two superb sippers: an all-rounder Vermouth Rojo and a special Blanco with a part Amontillado base and a Guindilla pepper infusion.

Pour liberally over ice, use them to build Negronis (white and red) and to decorate classic cocktails such as martinis (white vermouth) or manhattans (red vermouth). Pair with crisps, olives, gildas, late mornings, lunches and early evenings.

Aperitivo is incomplete without vermouth!

THE VERMOUTH

Manuel Vermouth Rojo

Infused with over 30 botanicals, this classic Spanish red vermouth is your daily aperitivo go-to. It is beautifully balanced with a focus on wormwood, cinnamon and tangy citrus.

Serving wise its uses are almost endless. We encourage you to experiment and below are some ideas:

  • Over ice the traditional way

  • Over ice with a dash of soda and garnish

  • Reinterpret or decorate classic cocktails like martinis  

Manuel Vermouth Bianco ‘Extra Dry’

This white vermouth is based on Amontillado from Jérez and Airén from Navarra. Uniquely infused with Guindilla peppers, it has a mouth-watering, salty-sour savoury character.
