Located on the Côte Vermeille in Roussillon, Vermeil Spirits crafts organic, small-batch spirits rooted in southern French terroir. Founded in 2022 by long-time friends Baptiste and Roberto, the project is driven by a deep commitment to quality ingredients and artisan methods. Distillation is carried out in a copper still, operated entirely by hand and heated by a wood fire, in collaboration with master distiller Simon Tardieu.

Vermouth Vermeil is built on an organic wine base of Muscat de Rivesaltes (vin doux naturel), infused with a dozen carefully selected botanicals, spices and fruits, including bitter orange, gentian and juniper. The result is an apéritif wine that balances gentle sweetness with herbal complexity — perfect over ice or as the heart of classic cocktails.

Vermeil Spirits Pastis

Pastis Vermeil is an artisan pastis distilled from a locally sourced organic wine base and a vibrant ensemble of plants and spices, including star anise, wild fennel, cardamom, wormwood, verbena and anethole. Its distinct colour comes from plant extracts — specifically wormwood and wild fennel. With a delicate anise nose that gives way to exotic fruit and spice, this is a top-shelf take on the classic French anise apéritif. Enjoy as an apéritif or digestif with water to open up its aromatic richness (add ice second, if you're so inclined).
