Vermeil Spirits
Collioure, Roussillon
Located on the Côte Vermeille in Roussillon, Vermeil Spirits crafts organic, small-batch spirits rooted in southern French terroir. Founded in 2022 by long-time friends Baptiste and Roberto, the project is driven by a deep commitment to quality ingredients and artisan methods. Distillation is carried out in a copper still, operated entirely by hand and heated by a wood fire, in collaboration with master distiller Simon Tardieu.

Vermeil Spirits Vermut
Vermouth Vermeil is built on an organic wine base of Roussillon vin doux naturel. It is infused with a dozen carefully selected organic botanicals, spices and fruit, including bitter orange, gentian and juniper. The result is an aperitif wine that balances gentle sweetness with herbal complexity – perfect over ice or as the heart of classic cocktails.
Vermeil Spirits Pastis
Pastis Vermeil is an artisan pastis distilled from locally sourced organic wine base and a vibrant ensemble of plants and spices such as star anise, wild fennel, cardamom and verbena. This is a top-shelf take on the classic French anise apéritif – drink with water to open up its aromatic richness.
